Vegan French Dip
Homemade seitan sausage, very thinly sliced. Sautéed with very thinly sliced mushrooms in a balsamic/soy reduction sauce.
The Au Jus was an earth balance roux, simmered with veggie broth, worcestershire, and balsamic.

Vegan Seitan Sausage: homemade a totally delicious !!
What I did was:
1. Take 1 cup vital wheat gluten.
2. Mix in spices: salt, pepper, paprika, onion flakes, garlic powder, small amount of curry powder.
3. Then in my vitamin blender: about 3/4 cup cool water, about 1/3 cup soy sauce, 1/2 can of cooked black beans, 1 tablespoon olive oil.
4. Blend wet ingredients in blender on medium high for a few seconds.
5. Combine wet and dry ingredients. It should be a moist glutinous dough. You might need more water. But I always start with a bit less liquid in order to work it into the correct doughy consistency.
6. Then take about 1/2 cup of the dough at a time and place on Tin foil in a sausage shape. Wrap up like a burrito. And pinch the foil ends to seal.
7. Place in a steamer covered for 30 minutes.
8. Remove from steam. Open foil when a bit cooler. Let cool off for a while. You can put them in Tupperware or a ziplock and then refrigerate.
9. You can cut slices for sandwiches. Or cut them into cubes for stir fries, etc.
